Watermelon Gazpacho

Cooling, light and refreshing, perfect for a hot summer day when you have an abundance of fresh veg but no desire to stand over a hot stove. The watermelon adds extra Yin (fluids) and sweetness.

Servings: 6 Prep Time: 10 mins

Ingredients

  • 1 - 2 ripe tomatoes

  • 1 cup cucumber

  • 1 cup zucchini

  • 1 cup watermelon or cantaloupe

  • 1/2 sweet onion

  • 1 clove garlic

  • salt

  • pepper

  • basil

  • dash of hot sauce?

Instructions

Coarsely chop all vegetables and watermelon. Blend until smooth or of desired consistency. Add in salt and pepper to taste. Serve chilled and garnished with chopped onion, pepper, and cucumber and sprig of basil.
