Sweet Beets And Carrots

A very simple recipe to utilize beautiful beets and carrots. Use as a side dish, or over salad greens. I take it as a snack to work often. Use this Asian dressing or simply pour your favorite vinaigrette over the beets and carrots to match your meal’s theme.

Servings: 4 -6 Prep Time: 10 mins

Ingredients

  • 2 large beets

  • 1 large carrots

  • 1-2 tsp mirin or honey

  • 1 Tbsp umeboshi plum vinegar

Instructions

Scrub and peel beets and carrot. Grate, julienne or cut roots into matchsticks. In a small bowl combine the ume plum vinegar and mirin or honey. Toss over roots and let stand for at least and hour before serving.
