Peach Caprese Salad

By mid summer, many of us have tomatoes and basil in abundance. Classic caprese salads are a fantastic way to use up some fresh ingredients without slaving over a stove or grill. Refreshingly simple, you don’t have to a recipes with quantities really — just tomato, mozzarella, basil, and a peach or two.

Servings: 6 Prep Time: 10 mins

Ingredients

  • 2 peaches, sliced

  • 2 -3 ripe tomatoes, sliced

  • Mozzarella slices (vegan moz works well too)

  • Basil

  • Balsamic vinegar and olive oil or a basil vinaigrette

  • Salt and pepper

Instructions

Arrange the salad on a plate alternating each ingredient. If you love basil, place a leaf between each layer in the salad. Or, if you are pressed for time, simply chop and toss the ingredients together. Drizzle with your olive oil and Balsamic or your favorite vinaigrette. Salt and pepper to taste.

Feel like heating things up? Grill the tomatoes and peaches a bit before assembling the salad.
