Fireworks Noodles

An easy, spicy noodle recipe. Enjoy it at Asian New Year celebrations or as a cheerful summer dish. Noodles represent longevity - and we all want that, right? Make the sauce a few days ahead and store it in the fridge to allow the flavors to mingle. The spark of heat comes from the ginger, garlic and Sambal olek and brings warmth to the digestive system.

Servings: 4 -6 Prep Time: 20 minutes Cook Time: 15 minutes

Ingredients

  • 1/2 cup oyster sauce

  • 6 Tbsp sesame oil

  • 6 Tbsp tamari or soy sauce

  • 6 Tbsp umeboshi plum vinegar

  • 1 1/2 cup sake

  • 1 1/2 Tbsp fresh garlic, minced

  • 1 1/2 Tbsp fresh ginger, minced

  • 1/2-1 Tbsp Sambal oleck

  • 1 cup celery

  • 1 red bell pepper sliced or julienned

  • 1 red onion thinly sliced

  • 1 yellow bell pepper thinly sliced

  • 1/2 cup snow peas

  • 1 cup carrot thinly sliced

  • 1/2 cup black sesame seeds

  • 15 oz cooked udon noodles

  • sesame oil of stir frying vegetables

Instructions

  1. In small bowl combine, oyster sauce, sesame oil, tamari sauce, sake, vinegar, garlic, ginger and sambal olek. Set aside or store in the fridge for up to 10 days. Little tip, make this a day or two ahead to allow the flavor to better infuse.

  2. Prep vegetables. In a wok with heat sesame oil. Toss in vegetables and toss a few times. Toss in noodles and add 1/4-1/2 cup of sauce over, thoroughly combining. Be careful to not over cook the noodles or the vegetables, you want the vegetable heated through, yet still crisp. Add more sauce if necessary. Remove from heat and garnish with black sesame seeds.
