Cinnamon Simmered Chicken

Chicken simmered slowly with cinnamon sticks in a lightly sweetened tamari sauce. Nice and warming on a cold winter’s day or a fantastic way to boost your Qi and Yang - and your house will smell fabulous. You may choose to thicken the sauce after cooking…I usually just leave it as is and ladle it out over black rice.

Servings: 4 Cook time: 2 hrs

Ingredients

  • 2 lbs chicken I usually use boneless and skinless

  • 3/4 cup tamari or soy sauce

  • 2-3 cinnamon sticks

  • 1/8 tsp pepper flakes

  • 1/8-1/4 cup rice syrup or sugar optional

  • water water enough to cover the chicken

Instructions

In a medium pan, combine tamari, water, and pepper flakes. Stir to combine. Add in chicken and cinnamon sticks. Add more water or tamari sauce as needed to cover the chicken. Simmer on low for 2-3 hours. Adjust the sauce flavor, adding a little sugar if needed. Serve with rice. I prefer to serve it with forbidden (black) for additional nourishment for the Kidneys.
