Black Bean And Sweet Potato Chili
Simple and filling, this chili is better the second day and favorite in all seasons.

Ingredients
1 Tablespoon olive oil
1 large sweet potato, peeled and diced
1 large large onion, diced
1 15 oz. diced tomatoes with juice
1 15 oz. cans black beans, rinsed
1 red bell pepper, diced
3 cloves of garlic minced
2 Tablespoons chili powder
4 tsp cumin
2 Tablespoons lime juice
1 1/2 cups water
1/4 tsp salt
fresh jalapenos
fresh cilantro
Instructions
In a large pot or Dutch oven saute’ the onions, peppers, and sweet potatoes over medium heat, stirring frequently, until onions start to soften - about 4 minutes.
Add in garlic, cumin, chili powder and salt. Stir continuously for 30 seconds.
Add water and bring to a low simmer. Reduce heat and simmer, covered until the potatoes are tender, about 12 minutes.
Add in beans, tomatoes and lime juice. Simmer for another 5 minutes. Adjust seasoning.
Serve with fresh cilantro and jalapenos.
