3 Sisters Salad

3 Sisters is traditional way of planting the staple food crops by the Indigenous people in the Americas. Squash, corn and a lentil or legume were planted in a checker board type pattern, rather than rows. The corn stocks acted as trellises for the legume to climb and hard winter squashes grew on the ground between the corn patches keeping the soil moist. The legumes added precious nitrogen back to the soil. It's a very wise and sustainable way to grow food.

Ingredients

  • 1 15.5 oz can black beans - rinsed and drained

  • 2 large ears of corn, cooked and cooled. Fresh cooked and cleaned off the cob is best, but frozen is dandy.

  • 1 small butternut squash, peeled, seeded, steamed and cooled

  • 1/2 a red onion, minced

  • cilantro

  • lemon juice

  • salt and pepper to taste.

Instructions

Combine all ingredients in a bowl and season to your personal preference. That’s it.
