Chocolate Crackles

A cookie jar favorite.

Ingredients

  • 1/2 cup unsalted butter

  • 1/2 cup organic sugar

  • 1/2 cup dark brown sugar

  • 1 large egg, room temp

  • 1 tsp vanilla extract

  • 1 cup all purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/8 tsp salt

  • powdered sugar for rolling

Instructions

  1. In a large bowl cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and then beat until well incorporated. Scrape down the sides and bottom of the bowl as needed.

  2. In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt together until combined. Add dry ingredients to the butter combination slowly, beating thoroughly - the dough will be sticky. Cover dough and chill for 3 hours and up to 2 days. Chilling is mandatory for this sticky cookie dough.

  3. Remove cookie dough from the refrigerator and allow it to warm for 10 -15 minutes.

  4. Preheat oven to 350°F.

  5. Form dough into into 1 1/2 inch balls. Roll balls in powdered sugar and place 3 inches apart on baking sheet lined with parchment paper or silicone mats.

  6. Bake the cookies for 11-12 minutes. Edges should be set but centers will still look a little soft. Cool cookies for 5 minutes on the baking sheet, and then transfer to a cooling rack to cool completely. The cookies will slightly deflate as they cool.
