Pumpkin Nog

Rich, dense and a bit sweet, this recipe isn’t as thick and cloying as the recipes from the turn of the century or eggnogs available in the store.  I prefer this nog warm and will sometimes have it as part of breakfast.

Servings: 4 Prep time: 5 mins

Ingredients

  • 4 medium eggs

  • 1/3 cup organic sugar (less if your milk of choice is sweetened)

  • 1/2 cup pumpkin puree

  • 2 cups milk of choice I used a vanilla oat milk and reduced the sugar. For a thicker drink, decrease the milk to 1 1/2 cups and add 1/2 cup of cream

  • 1/2 tsp cinnamon

  • 1/4 tsp cloves

  • 1/4 tsp nutmeg

  • whipped cream

  • 1/4 cup dark rum (optional)

Instructions

In a blender combine all ingredients - except whipped cream and rum - blend until smooth. About 1 minute. If you are serving it chilled, add the rum during the blending. Serve chilled with a dollop of whip cream and nutmeg. To serve hot, omit the rum during the blending process. Pour the nog into a small pan and heat over low until hot, remove from heat and stir in rum. Serve in mugs with whipped cream.

Recipe Notes

This recipe is very sweet, dense and rich. It nourishes yin but can be overly cloying for those with damp and phlegm.
