Peanut Butter Cookies

3 little ingredients. That’s it. No special equipment or extra time. Leave them plain, add a chocolate kiss, or a thumbprint and jelly.

Ingredients

  • 1 cup creamy peanut butter - I grind my own at the local coop, but any PB will do.

  • 3/4 cup organic sugar

  • 1 large egg

Instructions

  1. Preheat oven to 350°F. Line baking sheet with parchment paper.

  2. In a large bowl mix together peanut butter, sugar and egg. Roll mixture into small balls (about 1 inch) and arrange on baking sheet. Flatten each cookie with a fork, or press with a thumb print.

  3. Remove cookie dough from the refrigerator and allow it to warm for 10 -15 minutes.

  4. Bake for 10 minute. Remove from oven. Add chocolate kisses at this time if you like. Cool cookies for 2 minutes before removing from tray. If you are making PB&J cookies fill the thumb prints with your favorite jelly.
