Green Beans with Goat Cheese Walnuts and Honey

Tender green beans are steamed or blanched then tossed with honey fried walnuts and goat cheese. Wonderful as a side or served with a root or grain for a light meal.

Servings: 4 Prep time: 5 min Cook time: 10 min

Ingredients

  • 1 lb green beans, trimmed

  • 1 cup walnuts, crushed

  • 1 Tbsp honey

  • 2 -3 Tbsp goat cheese

  • drizzle of olive oil or butter

  • Salt and pepper to taste

Instructions

  1. In a skillet, heat oil or butter, just enough so that the walnuts don’t stick. Cook walnuts over medium heat, stirring occasionally until fragrant. Remove from heat and drizzle the honey over the walnuts, coating them well.

  2. Blanch or steam the green beans until just tender, about 5- 7 minutes. Remove immediately from heat, and drain green beans if you blanched them.

  3. Toss walnuts, green beans and goat cheese together. Season with salt and pepper to liking.
