Berries In Lavender And Honey

Raspberries are fragile and only available for a short period of time. Their bright, tangy flavors pair beautifully with lavender that blooms at the same time. A kiss of honey and we have a light, simple dessert or side for breakfast.

Ingredients

  • 4 pints fresh berries - find what is fresh and in season

  • 3 sprigs fresh lavender or 1-2 T. dried

  • 1/3 cup water

  • 1/4 cup honey

  • cream or whipped cream (optional)

Instructions

  1. Rinse berries gently under cool water. Leave them drain while making the lavender syrup. In small sauce pan, combine lavender and water. Bring to boil and infuse water for 3-10 minutes. The longer the infusion, the stronger the lavender flavor. Remove from heat and strain out lavender blossoms. Add honey and dissolve honey. Drizzle over berries and serve immediately.
