Pork Chops with Dried Apple and Apricot Compote
Ingredients
4 center-cut pork chops (1 inch thick)
1 cup dried apples, diced
1 cup dried apricots, diced
1/2 cup water
maple syrup (optional)
1/8 cup brandy (optional)
olive oil
sea salt
cinnamon
fresh ground pepper
Instructions
In medium sauce pan, combine water, dried apricots and dried apples. Simmer over medium heat, covered until the fruit is soft.
Add in cinnamon, brandy and a dash of salt. Season to taste, add a little maple syrup if necessary, set aside.
Heat 1 T. ov olive oil in large skillet big enough to hold all the chops.
Brown lightly on both sides.
Season the chops with sea salt and pepper.
Cover the chops evenly with 1/2 of the fruit compote, reduce heat and cook for about 20 minutes or until the chops are done.
Transfer chops to plates and serve with remaining compote.
Notes
Pork is a rich meat, so use it with caution if you are trying to drain damp.
