Delicately sweet, this honeycake is moist and decadent without being too cloying. This is the basic recipe that I use during the spring and summer and I serve it with fresh whipped cream and berries. During the colder months warm it up a bit by adding sweet, warming spices like cinnamon and nutmeg - about a teaspoon each. Instead of the fresh berries, dice and apple and/or pear and heat them in a skillet with a little butter, cinnamon and a kiss of honey to serve over the hot cake.

Ingredients
- 1/2 cup butter softened
- 2/3 cup honey
- 2 large eggs
- 1/2 cup yogurt
- 2 cups spelt flour I like to use spelt
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- pinch cinnamon

Instructions
- Preheat oven to 350°. Grease with butter a 9-in. cast-iron skillet. In a large bowl, beat butter and honey until blended. Add eggs, one at a time, beating well after each addition. Beat in yogurt. In another bowl, whisk flour, baking powder and salt; add to butter mixture.
- Pour batter into buttered skillet. Bake 25-30 minutes or until a toothpick comes out cleans. Sprinkle a little cinnamon over the top of the cake. Cool on wire wrack. Serve with fresh berries and cream.
