Ingredients
- 1 tbsp olive oil
- 1 lbs chicken, beef, or tofu diced or cubed or thinly sliced
- 1 bell pepper chopped
- 1/2 can baby corn, drained optional
- 1/2 can water chestnuts, drained optional
- 1-2 onions chopped
- 1 medium carrot chopped
- 1 handful mushrooms sliced
- snow peas optional
- ready-wok noodles optional
- 3-4 tbsp stir fry sauce of choice like terriyaki or a spicy Korean BBQ

Instructions
- Heat oil on high in wok or skillet. Once hot add the meat to pan. If you are using chicken cook until there is no pink in the middle. For beef, cook as desired. Remove from heat and place in bowl or plate. Using the same wok or skillet. Add in onions, carrots and peppers stirring until slightly softened, add in remaining vegetables and sauce, cook until wilted and onions are translucent, stirring frequently. Once the vegetables are done, add in meat or tofu and noodles (and more sauce if desired). Sometimes I cook my noodles in a separate pan. Serve hot. Make lots, works wonderful as leftovers for breakfast.
