Baked Sweet Potatoes With Cranberries And Apples

Sweet potatoes are members of the convolvulacea or morning glory family. Their skin ranges from deep brown, purple or red, to delicate yellows and whites. Their flesh varies as greatly as their skin tones running from white and yellow to deep oranges and reds.

Nutritionally, sweet potatoes are very high in Vitamin A (almost 700% of daily dose) and the more colorful the flesh the higher the Vit A. Sweet potatoes are high in calcium [1], magnesium and potassium and have valuable amounts of other minerals too. They are a fabulous source of fiber [2], they barely tip our glycemic index and are anti-inflammatory in nature.

Like many roots and winter squash, sweet potatoes and yams lend themselves to sweet or savory dishes. This time, I chose to go down the sweet path with a playful twist on a Thanksgiving favorite.

  1. Combine all ingredients, except marshmallows, in an oven safe dishes. Cover and bake for 45 minutes - 1 hour at 350°. The sweet potatoes are done when they are soft when a fork is inserted.
  2. Now...do you want to add marshmallows for a twist on the old Thanksgiving tradition? If so, remove the sweet potatoes from the oven and set the oven to broil. Cover the sweet potatoes with marshmallows and return to the oven. Watch them closely. They can burn quickly. You only need about 5-8 minutes or until marshmallows are golden or browned to your liking. Enjoy!

Recipe Energetics:  Sweet potatoes and yams have very similar energetics. Both are warming in nature and nourish the Earth [19]element organs of the Stomach, Spleen and Pancreas. The darker the flesh, the more warming and centering. Both have a full, sweet flavor, and build Qi [20], Fluids and Blood [21] and create overall vitality and strength.

This recipe is very sweet because of the addition of maple syrup, an apple and the marshmallows of course. Cinnamon and nutmeg warm and create circulation.
